How do I make onigiri [rice balls]?


I want to make onigiri on Friday but the thing is I don't know how. There aren't any japanese food marts around here so I'm pretty much out of luck. Is there anything I could substitute Japonica with?

Rice balls are called onigiri in Japanese. Rice balls are usually shaped into rounds or triangles by hands. Onigiri are often put in Japanese bento lunch boxes.
INGREDIENTS:
4 cups steamed Japanese rice
8 strips of dried nori (seaweed)
Salt to taste
*For fillings:
ume (pickled plum) / grilled salted salmon
PREPARATION:
Grill salted salmon slices. After the salmon cools, tear it into small chunks and set aside. Cook steamed rice. Put about a half cup of steamed rice in a rice bowl. Make a dent in the center of the rice and place fillings, such as ume (pickled plum) and grilled salmon. Wet your hands in water so that the rice won't stick. Rub some salt on your hands. Place the rice in the rice bowl on your hands. Form the rice into a round or a triangle, by pressing lightly with your both palms. Wrap the rice ball with a strip of nori.
How To Cook Japanese Rice
2 cups Japanese-style rice
2 1/2 cups water
Pan/Rice Cooker
Put the rice in a bowl and wash with cold water.
Repeat washing until the water becomes clear.
Drain the rice in a colander and set aside.
Place the rice in a pan or rice cooker and add water
Use just enough water to cover the rice -- don't fill the entire pot.
Let the rice soak in the water at least 30 min. One hour is ideal.
If you are cooking the rice in a pan, cover the pan with a lid and bring to a boil over high heat.
Once the water boils, turn the heat down very low and cook about 15-20 min. until the water is almost gone.
Remove the pan from the heat and let it steam for 10-15 minutes before serving.
If you are using an electric rice cooker, you don't have to worry about adjusting the heat. You still need to let the cooked rice steam before you open the lid.
Japanese rice gets sticky when it is cooked. The long-grained American rice isn't proper for Japanese cooking, because it is drier and doesn't stick together well.

Use 5 pounds plums; wipe with damp cloth and prick several times with large needle. Boil 5-2/3 cups sugar, 1 quart vinegar and cloth bag contining 1 ounce whole cloves, 1 ounce allspice berries, 1 ounce mace and 2 ounces stick cinnamon; pour over plums and let stand overnight. Drain again, cook syrup point, remove spice bag, pack in clean hot jars and seal at once. Approximate yield: 5 pint jars.  (+ info)

Black Japonica Rice recipes?

i bought this rice blend because its supposed to be good for you, however i have no idea what to eat it with, or how it should be seasoned

Black Japonica rice with Thai curry

21/2 cups water
pinch of salt to water (if desired)
11/4 cups black Japonica rice
1 14 ox can coconut milk
2-3 tsp. Thai green curry paste
1 14.5 oz can no-salt added diced tomatoes, undrained
2 lb bone-in split chicken breasts, skinned
4 scallions, thinly sliced (keep white and green parts separate)
3 T fresh chopped cilantro
2-3 Tbsp. fresh line juice
Soy sauce (optional)
Fresh cilantro and lime wedges, for garnish

Preparation:

Bring water and salt to a boil in a heavy, 2-quart pot or Dutch oven. Stir in rice. Reduce heat, over, simmer until some grains have burst open and rice is tender, about 45 minutes. Remove from heat and let sit for 10 minutes.
In a 4-quart pot over medium heat, blend coconut milk and curry paste until smooth. Add tomatoes with juices, chicken, and whites of scallions. Bring to a low boil over medium heat. Cover, reduce heat, and simmer until chicken is cooked, 20-30 minutes. Remove chicken. Shred or chop meat and discard bones. Return chicke3n to pot along with green scallion parts, cilantro, lime juice to taste, plus soy sauce, if desired.
To serve, press about 3/4 cup rice into a ramekin or a coffee cup. Unmold onto center of plate. Spoon chicken curry around rice. Garnish rice and curry with additional cilantro. Set a few lime wedges to one side.

Cooking method plain with some salt & butter:

1 cup Black Japonica Rice, 2 cups water or broth, 1 tablespoon butter. Combine in rice-cooker; takes about 50 minutes to cook. Alternately place in pot, cover with tight sitting lid, bring to boil, simmer on low 50 minutes or until all water is absorbed. Butter may be omitted  (+ info)

How likely is it that I have Bilharzia?


I was in South Africa (KZN) recently and I swam in a freshwater lake... Since I've been back I've had bad abdominal pains, every few hours, and diarrhea. The pain is getting more frequent.

I know that the KwaZulu Natal region has a problem with Bilharzia (Schistosomiasis) and now I'm worried that I've got it. I know it was stupid to swim in a lake that wasn't meant for swimming in - how likely am I to have contracted the illness from it?

Whole Grain Substitute for WHITE SUSHI RICE?


I want to make sushi out of a whole grain rice because it takes more time for it to become sugar.... What kind of whole-grain rice is easily available and fit for making sushi other than Japonica (Japanese rice)?
You see I'm already in Asia and I have a difficult time finding black japonica (the whole grain Jap rice) as it is. Japanese rice has a different texture and I'd like to know if anyone else knows a good sub.

Adding organic vegetable broth to brown rice?


I got "Lundberg Countrywild ~ A gourmet blend of whole grain brown rice" with long grain brown rice, whole grain Wehani rice, and whole grain Black Japonica rice. I was wondering if it would be yummy to add vegetable broth? and it also says a tbs of oil is optional, should I add sesame oil? Or peanut? Or should I not add oil?

It is fine to use broth of any kind, and with the oil I would use a neutral oil, like canola, corn or soya oil, peanut is fine to, adding veggies like carrots, onions and celery will perk it up, with that mix, be a precise as possible with the liquid as all cook at different times, so you want all the grains to be cooked and ot have one still firm or crunchy.  (+ info)
