Eastern equine encephalitis (EEE) or Triple E..Need Advice..?

I am a nervous mother and my brain is in overdrive right now. My 7 yr old son has come down with a fever..101.9 and he has been saying that his throat hurt and that his arm hurt (I *think* his arm may hurt from a video game).
Despite my using a bug spray with DEET my son has gotten a few mosquito bites, I am scared that he has the dreadful triple E.
How common is a cold and/or a "normal" virus causing a fever in the summer? He has been in a chlorinated pool so I would have thought that most things would have been fought off...
I have just had a hard time lately and my mind and nerves are shot...
Any advice?

He may just have a simple bacterial infection of the throat. Encephalitis is something that affects the nervous system, head aches, stiff neck, notice changes in the way he acts mentally - slurry speech, hallucinations those kinds of things. Strep Throat in our area in Texas is still going around eventhough its July. You can have him checked out by the doctor to be on the safe side.

What are the required high school classes to become an equine chiropractor?

I would like to get an idea on what classes I would need to be an equine chiropractor. I m starting high school next year and I don't want to get half way through high school without the right classes for an equine chiropractor. Is there required classes, if so what are they? I would love to hear from chiropractors all over, from people to dogs to horses.

most governments take a dim view of non-trained people faffing with animals. You could try becoming a vet  (+ info)

what is the best equine massage therapy school?

I live in Ohio and am interested in training to be a equine massage theripist. What is the best school.

Midway College in Kentucky (near Lexington) has an Equine Therapy program (I'm actually in their program right now). I think you would have a BS in Equine Science with certificate in Equine Therapy. So it'd be about 4-5 years in school.
If you want something shorter, I'd look at Equitouch or Equissage  (+ info)

Can you please share some simple middle eastern style recipes?

I am interested in some simple middle eastern recipes, if you have some to share. I need the recipe, including the measurements to be in American english, because I don't know how to convert from other languages. Thank you for that.

When I think of Middle Eastern, I am thinking of Iran, Iraq, Israel, Pakistan, Lebanon, Syria, Egypt, Jordan, Saudi Arabia.

So if you have any recipes to contribute from these lands, and they are not too complicated, I would love to learn of them.

Thank you again.

Don't let the long list of ingredients scare you, this is actually an easy recipe:

Chicken Tikka Masala

1 cup yogurt
1 tablespoon lemon juice
2 teaspoons ground cumin
1 teaspoon garam masala
1 teaspoons cayenne pepper
2 teaspoons freshly ground black pepper
1 tablespoon minced fresh ginger
1 teaspoon salt, or to taste

3 boneless skinless chicken breasts, cut into bite-size pieces
4 long skewers

In a large bowl, combine yogurt, lemon juice, cumin, garam masala, cayenne, black pepper, ginger, salt. Stir in chicken, cover, and refrigerate all day.

1 tablespoon butter
3 cloves garlic, minced
1/2 jalapeno pepper, finely chopped
2 teaspoons ground cumin
2 teaspoons paprika
3 teaspoons garam masala
2 8-oz cans tomato sauce
1/2 teaspoon salt, or to taste
1 3/4 cups heavy cream
1/2 cup chopped fresh cilantro

Preheat a grill for high heat.

Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.

Melt butter in a large heavy skillet over medium heat. Sauté garlic and jalapeno for 1 minute. Season with cumin, paprika, garam masala and salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.  (+ info)

Why is Eastern Europe and Central Asia home to the most rapidly expanding HIV epidemic?

Russia is a developed nation, yet it is still suffering this rapid epidemic... Why? And why are there not the preventative methods and treatments available to Eastern Europe and Central Asia that are available in the West?

Eastern Europe do not want to deal with this problem and that is why it is so wide spread. They do not recognize the seriousness of the problem.  (+ info)

What is the middle eastern spice used in rice pilaf that resembles a black rice-shaped berry?

My grandmother used to make her Rice Pilaf with a spice/herb/berry (I have no idea what it really is) that she found in a Middle Eastern store. It was a little larger than a cooked grain of rice with a shiny black skin and very tart flavor. After countless internet searches, I still can't find any picture of it. Also, it's not sumac or sumac berry. Thanks.
You're right - Barbaris - now I remember. Thanks!

This might be the one, I have some in my refrigerator....the ones I have aren't really black but get darker from being dry, the name is Barberries or the other name is Zereshk. They have a tart flavor and are cooked with rice too.  (+ info)

•Italian Tomato Sauce
•This is the best you will ever have and very authentic. .

Get a sauce pan heat up some vegetable oil, (enough to cover the bottom of the pan 3/4 inch. Use an oil like Wesson Vegetable oil, (lighter and cleaner tasting than olive oil) add to that 3 - 4 cloves of smashed, pre-salted garlic. Heat that over a medium heat until the garlic is soft. Now, to the hot oil mixture, add 4 - 5 fresh basil leaves, torn . Do not allow the garlic to burn, you just want the basil and garlic to soften. Pour in 4 cans 8oz tomato sauce, any brand tomato. Turn up the heat a bit. Now take a can of WHOLE (28 oz) of San Marzano imported tomatoes, NO substitutes.(the reason you want the WHOLE tomatoes is that the pre-crushed are a lower quality, contain the scraps and or are the damaged tomatoes; therefore, not as good) First pour the juice of the San Marzano, then crush the rest of the tomatoes in a colander, by hand over the pot allowing all the pieces to be crushed, then pour that into the pot. Add a few more leaves of torn fresh basil, 1/2 teaspoon of garlic powder, regular black pepper (no salt) Turn down the heat and let it all simmer for 25 minutes.
When done set aside, now turn off the heat, stir in three heaping tablespoons of Pecorino Romano imported grated Italian cheese, Locotelli type is best if you can find it. That contains all the salt you need, the salt and the salt in the canned tomatoes, should be enough. I never have to add any extra. .
Serve with your favorite pasta and a few spoons of fresh Ricotta cheese added at the end to make it superb. You may also add a little extra fresh ground cracked black pepper at the end if you like and or red pepper flakes (optional) if you prefer.
If you follow this exactly and use the exact ingredients, your friends and family will not think you made this unbelievable sauce. They will think you are a genius!
If you live near a Trader Joe's store I highly recommend that you purchase a bag that contains 13 frozen small precooked flame broiled meatballs. Let them simmer from frozen in the sauce for 25 minutes until warm. That is the only type I recommend . .yum . .or make your own. I don't bother to make my own anymore, I can't make them better nor cheaper than the ones from Trader Joes.
If you can't find The San Marzano tomatoes where you live, they are available to purchase on the internet. Keep in mind, these are a type of canned tomatoes from a special area of Italy, many companies import into America a San Marzano tomato. First ask your grocery store manager. The next important ingredient is the Romano Cheese, Locotelli is best if you can find it if not you can purchase it from the net as well. The Tomatoes sauce any domestic brand is just fine, I use what ever is on sale, I tried them all which ever one, Del Monte, Hunts, Contadina, even the store brand. whatever you can find. Regular salt type, not the low salt. If I have a choice and the price is right, I prefer Contadina, they are a tiny bit sweeter. .
I am serving it with some store bought homemade style fresh pasta and the Trader Joe's Meatballs  (+ info)
